Once upon a time

There was a young girl who woke up on the wrong side of the bed. Letting her emotions take over her, she got into a heated argument with her boyfriend as she was exceptionally petty about his neglect to fulfil a minor task. Despite the precipitation of a frosty atmosphere between them, they went ahead with their original plans to have lunch in central London.

It has been more than an hour now and she has yet to give in to a conversation. As they approach the restaurant, she spots something in the corner of her eye – “St. John Bread and Wine”. Who cares if she’s gone to 3 spin classes that week? Who cares if all her hard burned calories will go to waste? Only FOOD can cure both a bad craving and a bad day. She abruptly changed her direction of travel (as quickly as she goes switches between her different moods) and marched straight into the bakery section of the restaurant. She made an order and sat at the bar, waiting impatiently.

15 minutes later, the waiter came out and gave her a greasy looking brown paper bag. She ripped open the bag and there they were. A gorgeous buttery smell emanated from the brightly yellow little fluffy cakes, letting out steam as they were only taken out minutes ago from the oven. She closed her eyes and took a large bite into the warm Madeleines. She turned to her boyfriend as tears rolled down her cheeks and said, “Oh my god, I forgive you.” #TrueStory

Ok…… Maybe I am exaggerating about crying despite being a very emotional person, but I assure you that I was very close to tears. Not only because I was being extra hormonal that day, but these Madeleines are real happiness to me. And now that I’ve gotten my hands on the original recipe by St John, you will have to try it yourself so you know what I mean.

I challenge you to not eat them immediately after baking. Trust me, it’s impossible!

Perfect Madeleines โ€“ St John Bread and Wine

With gorgeous buttery smell emanated from these brightly yellow little fluffy cakes, this recipe is NOT a replica but the original one from St John Bread and Wine. These madeleines are the best little cakes I've ever had in my life.

Ingredients

Madeleines

  • 135 g Unsalted Butter
  • 2 tbsp Honey
  • 3 Eggs , large
  • 110 g Caster Sugar
  • 15 g Light Brown Sugar
  • 135 g Self-raising Flour , sifted

Glaze (Optional)

  • 1/2 cup Icing Sugar
  • 2 tsp Milk
  • Food colouring

Instructions

  • Melt the butter in a saucepan over medium high to simmer to brown the butter, then leave aside to cool. Mix the honey into the cooled browned butter.
  • Beat the eggs and sugar together for 8-10 minutes until the mixture triples in volume and trails form on the surface. Fold in the sifted flour and melted butter until entirely incorporated.
  • Leave the batter in the fridge overnight to intensify the flavours and allow them to rise much better.
  • Preheat the oven to 170 degrees Celsius. Grease a madeleine tray with butter and dust with flour. Place a dessertspoon of the batter in each shell and bake in the oven for 12 minutes.
  • EAT !
  • (optional) Mix all the ingredients together and dip the warm madeleines in.

    Oh my god I donโ€™t even like baking but now I want to try making these Madeleines. I love the bonne maman brand ones so much and these look so lovely. Also hey you treat yourself to Madeleine if you want to (spin class or no spin class) xx
