1-Two-3+ Cream Cheese Perfectionist
Cream cheese frosting is always second to any other buttercream frosting because it’s much creamier and it may be difficult to work with. Especially if you are from a warm weather country, the cream cheese becomes so soft that piping it may be really difficult. Even so, there are a few reasons why I’d still choose a cream cheese frosting over a buttercream frosting any day: I can reduce the sugar and thus the sweetness because it already has a great tangy flavour It makes me feel good knowing that I’ve halved my calorie and fat intake 🙂 Now, I don’t really like the word Perfectionist but I can’t quite…

Matcha Brownies
In preparation for visiting the best place on Earth (you guessed it – Japan), I am warming up my taste buds by exposing them to an overdose of matcha in the hope that I graduate into a Matcha Snob after my trip in 3 weeks. Fellow acquaintances would refer to me as Sensei Sue. NO, it will be SenSue. (Wait, this isn’t my first time revealing my name right? Did I just blow my mysterious cover? LOL #fail #Ican’tbegossipgirl) To be honest, besides the obvious reason that Matcha = Love, I am also trying to finish up the remaining powder in my cabinet. Red Velvet Cupcakes
First thing’s first, red velvet is NOT CHERRIES. What is red velvet? What exactly is a red velvet cupcake and how do we explain its taste? Chocolatey? Vanilla? IMO red velvet is the umami of cupcakes – a taste which is rich, familiar yet unexplainable – to put it simply. There may be a lot of debates out there, but the conclusion is: red velvet recipes are essentially just originations from red coloured cakes. During World War II, Red coloured cake recipes were introduced by using beetroot juices. The enhanced colour not only served the purpose of making cakes more appealing, beets were also used as a filler and to…

Easy French Macaron Recipe
I won’t lie and say that it has been a busy period, but I will admit that I have definitely been procrastinating as I experienced the Christmas / New Year snooze. I had made plans ahead for Casa Du Duchess, but with the holiday season and Christmas feast(S), I spent so much time watching TV and taking naps. Heck, I had turkey meals 4 days in a row! Uffh. But it is a new year and I am feeling very much motivated again! 🙂 Last Christmas, I really wanted to bake some macarons with a slightly special filling – Bailey’s Irish buttercream! The filling was an experiment that was very…

Hiya! A quick recap: One day it’s beautiful cookies and the next day they transform back into spreading ugly ducklings – what happened?! After our previous talk on (#3 Leavening), we have finally arrived at the final episode of the Chewy Cookies Series, which is also leading up to my classic chocolate chip cookies recipe. However the fact is, I have been taking it lightly when it comes to picking out the exact ingredients, changing my constants into variables instead. *Below I have only identified a few ingredients which I may have…
